Ca' Del Baio Barbaresco DOCG "Asili" RISERVA
The Asili cru, located on an extraordinary hill in the municipality of Barbaresco, represents the maximum synthesis of the microclimatic and organoleptic vocation for the Nebbiolo grape.
The Grasso family is among the major owners of this prestigious strip of land and, respecting what previous generations have done, continues, year after year, to safeguard its values and carefully cultivate its owned vineyards.
After years of silent experimentation, in 2011 the first Barbaresco Asili in the Reserve version saw the light. The cornerstones of this precious wine are the Asili “environment” (land and climate), the Nebbiolo vine, our work as winemakers and the ambition that guides us to always explore new goals of quality and expressiveness of the territory.
Color garnet red; nose intense, with powerful lavender, pine, rosepetals, aromatic herbs, spices and goudron notes. taste dry, full-bodied and warm. It is exceptionally smooth and velvety in the mouth. It is ideal for pairing with braised and stewed red meat, game, and aged cheeses. It transforms into a meditation wine over time. Chocolate is an unusual , but surprisingly delightful pairing suggestion.
