
Ca' Del Baio Barbaresco DOCG "Vallegrande" RISERVA Viti Vecchie
The Valgrande or Valegrande vineyard is a mention of the municipality of Treiso and has an average extension and an altitude ranging between 270 and 400 m above sea level. The best parts for growing Nebbiolo are the central and exposed ones between West and South-West.
The municipality of Treiso is mainly characterized by the Lequio Formation, dating back to the Serrava lian, which alternates layers of calcareous marl with frequent layers of sand. However, in the CRU Vallegrande, we mainly find sandy Sant’Agata Fossil Marl, which gives elegance, depth and less nervous hints to the Barbaresco.
The pressing of the grapes, harvested by hand and selected in some micro-areas of the CRU Vallegrande, produces the must which ferments, with maceration at a controlled temperature, in wooden vats. During the lively phase of fermentation, two pressings per day allow for the adequate extraction of colors and aromas from the skins. Then, the submerged cape stay continues for a long time, for about 60 days. After racking, the wine matures for 30 months in oak barrels and, finally, refinement in the bottle is prolonged for 12 months before being put on the market.
