14 days maceration in open wood and stainless steel tank. Matured 18 months. 20% in new oak barrels and 80% in old oak barrels (2 to 4 years old). The signature of the winemaker, on a Saint Joseph that is too well made. Very flattering nose with a mix of black (blackberry) and red fruits. A beautiful length, a subtle balance. Pairs well with sautéed rabbit, deer, and cheeses. This wine can be kept for 15 years if stored in ideal conditions.
