Lustau has selected the wines for this impressive Amontillado from a small solera of the wholesaler Obregón-a mere ten botas in all. It has the scents of the cellar, of limestone and of mushroomy flor. And there’s enough acidity in this deep, broad wine to accompany Serrano ham.
