All fruit was hand harvested in mid-late Sept. from certified organic vineyards. The Parellada came from 2 different 38-year-old bush-vine vineyards at 450 m. The Xarel-lo from a single 26-year-old, cordon-trained vineyard at 315 m, with limestone soil. Finally, the Macabeo from a single 46-year-old bush-vine vineyard at 260 m. The wine was aged for 24 months on lees prior to disgorging in May 2016.

Limpid straw-yellow. Mineral-accented citrus and pit fruits, toasty lees, sweet butter and pungent flowers on the expansive nose. Supple and energetic on the palate, offering ripe tangerine and white peach flavors that show very good clarity thanks to a mineral topnote that gains strength with air. Tightens up steadily on a long, lively finish that leaves notes of pear and candied ginger behind. “This lovely cava comes from one of my favorite producers for bargain bubbly. Made from organically grown grapes, the wine is remarkably sophisticated, with baked apple and quince flavors kissed with citrus and pastry crust. It is not sweet by any means, yet as I sip it I find myself craving an apple pie. Bravo! ABV: 11.5 percent.”
