This wine was produced from a single, 40-year-old vineyard called Ladera Fuentesca. It is located at 900 meters above sea level and offers soils rich in limestone with a permeable texture, which is important for water retention in this area where irrigation is not used. The climate is Continental (hot days, warm nights and a fairly extreme winter) with Mediterranean influence. The vines are farmed with sustainable methods and minimal chemical inputs. Careful selection of bunches during hand harvesting is followed by a short maceration of the crushed grapes with their skins, only 6 hours, at very low temperatures to minimize the final color of the finished wine. Thereafter the wine was fermented at low temperature to maintain all of the fruit character of the grapes.
